Profile
Domaine des Varoilles ownes 13 hectares of vineyards in Gevrey Chambertin and Chambolle Musigny and is co-owned by the negociant Naigeon Chauveau. Eric Gautier is the cellar master.
Hand picked and sorted grapes are cold macerated for 5-6 days before fermenting in vats for two weeks in temperature controlled conditions. In bottling, the wines are generally not filtered or fined.
